This recipe is based off Terry Hope Romeros recipe from her book “Salad Samurai”. I didn’t have any cranberries which is why I substituted them with baked mangos. I also add a side of crispy smoked Tofu for some extra protein.
Baked Mango may sound a little unusual but if you do research online you’ll find that people bake it with lime juice and honey. I decided to go with lime juice and cayenne instead which is a common way to prepare it in the Philippines. I learned from a friend who is from the Philippines.
- After stemming the Brussels sprouts use the food processor to chop them using the grater blade. This saves time and labor with the chopping.
- If you don’t have shallots you can use regular yellow onions instead.
- If you want to drink your white wine instead of using it in the meal, white wine vinegar works just fine, as well.
