Mushroom, Barley and Brussels Harvest Bowl adapted from Terry Hope Romero

This recipe is based off Terry Hope Romeros recipe from her book “Salad Samurai”. I didn’t have any cranberries which is why I substituted them with baked mangos. I also add a side of crispy smoked Tofu for some extra protein.

Baked Mango may sound a little unusual but if you do research online you’ll find that people bake it with lime juice and honey. I decided to go with lime juice and cayenne instead which is a common way to prepare it in the Philippines. I learned from a friend who is from the Philippines.

Tips

  1. After stemming the Brussels sprouts use the food processor to chop them using the grater blade. This saves time and labor with the chopping.
  2. If you don’t have shallots you can use regular yellow onions instead.
  3. If you want to drink your white wine instead of using it in the meal, white wine vinegar works just fine, as well.
